My favourite has to be from The Last Blade also for the Neo Geo (i'm a little bit of an SNK nut) after you've selected your character. You can pick between two modes that slightly change the way your character fights.
And last but not least, while playing the Magical Drop I arcade game I was one bubble away from winning, but then the computer went "NO U" at the last second.
